since an onion has cells with its contents,like amoni acid sulfoxides,cutting it breaks open its cells so releasing its contents. the amino acid sulfoxides,relase sulphur which will then react with water in the eyes(moist environment) to form sulfuric acid,thus it irritates the eyes then tears are produced to wipe out the acid
